Jason Aldean " Dirt Road Anthem "



This gorgeous man born February 28 in Macon, Georgia has a voice that could melt any girls heart and turn their knees to jelly and if you think I might be a little obsessed you'd probably be right! Considering I'd never even heard of him till a few months ago.

Sunday Pancakes


Most Sunday mornings I try to make pancakes for breakfast, this is probably more of a pikelet recipe but I call them pancakes anyway.

Ingredients
1 cup self-raising flour
pinch salt
3 tablespoons sugar
1/2 teaspoon bicarbonate of soda
1 cup milk
1 egg 
1/2 teaspoon vanilla
1/2 teaspoon brown vinegar

Put dry ingredients into bowl. Add milk, egg, vanilla and vinegar, whisk together. Heat frying pan that has been sprayed with cooking spray and cook tablespoons of mixture until bubbles start to appear,  then turn over and cook for a further minute or so till browned. Serve with fresh strawberries,  maple syrup, lemon butter, strawberry jam or anything that takes your fancy.

Delicious Butterscotch Pudding Recipe

This is a really delicious self-saucing butterscotch pudding recipe that I have been making my family for years.

Ingredients

Batter
1 cup self-raising flour
3/4 cup brown sugar
2oz margarine
1/2 cup milk
1 teaspoon vanilla

Sauce
1 tablespoon golden syrup
1/4 cup brown sugar
1 oz margarine
1 1/2 cups boiling water

Melt butter. Put dry ingredients into bowl and mix in melted butter, milk and vanilla.
Prepare sauce by boiling water, put 1 1/2 cups boiled water into a jug and add golden syrup, brown sugar and margarine. Stir well until combined and melted.
Place batter into casserole dish and spoon over prepared sauce over the back of a spoon.
Cover with lid and bake for 8 minutes on high in microwave or 40 minutes at 180 degrees in oven.

Chilli Con Carne

This recipe is a family favorite!


Serves 6
2 medium onions                                                          
3 cloves of garlic                                                          
2 medium carrots                                                       
2 sticks celery
olive oil                                                       
1 teaspoon mexican chilli powder                              
1 teaspoon ground cumin                                          
1 x 400g tin red kidney beans
1 x 400g tin chick peas
2 x 400g tins diced tomatoes
500g minced beef
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
1 tablespoon ground cinnamon
 1x tin water                                                      

How to make

Peel and finely chop onions,  celery, carrots and garlic. Put 2 tablespoons olive oil in large saucepan or caserole dish on low heat and add chopped carrots, celery, onions, garlic, cumin, cinnamon, chilli powder,  salt and pepper. Cook for 10 minutes over low heat until vegetables softened and lightly coloured. Add drained chick peas, red kiney beans and the 2 tins diced tomatoes . Break up mince and add to pan along with the brown sugar and balsamic vinegar. Add 1 can water and bring to the boil then simmer over very low heat for about one and a half hours, stirring occasionally.

Serve with

Rice or mashed potatoes, sour cream and avocado.
